Happy New Year! A new year is always a great time to reflect and reset. Life is short, no matter how long we live; and, the older we get the faster time seems to pass us by. Time can never be recovered after it is passed. It is truly a precious commodity each day; and, we get to choose how we will spend it. Thinking of time and eternity, Psalm 39:4 comes to mind, “Show me, O Lord, my end and the measure of my days. Let me know how fleeting my life is.” I wonder if we knew how much time we had left on this earth how differently we would spend that time? Then I think, what are we waiting for!? So, my prayer is Psalm 90:12, “Teach us to use wisely all the time we have.” May God richly bless you as you reflect on the past year and reset for this year, choosing how you will use your gift of time each day.

Chef Greg's Corner!
 
This Chicken Stock recipe is a perfect base for soup. Chicken stock tends to be made more from bony parts and chicken broth is made more out of meat. Chicken stock tends to have a fuller and richer flavor, because of the gelatin released by long-simmering bones. ...that helps the flavor greatly. Come back next month for one of Chef’s soup recipes!
 
INGREDIENTS – yields 3 cups of stock
1 pound raw chicken bones
6 quarts cold water
1 large onion, unpeeled, quartered
2 medium carrots, peeled and halved
3 ribs of celery, halved crosswise
 
PREPARATION
  1. Place all ingredients in a large stock pot, cover with water and bring to a full boil; then turn down to a simmer for about 2 to 4 hours.
  2. Strain the stock through a fine-meshed sieve. Let cool.
  3. Scrape the fat that rises to the top. Refrigerate for up to 5 days, or freeze for up to 3 months
 
 
 
This past month Chef Gary and his son, Keegan, brought some holiday cheer to the cafe' by joining Chef Greg in the kitchen and preparing a few delicious specials. We are always blessed when Chef Gary joins Chef Greg in the kitchen! Watch Facebook for his next visit!

MEET SAMSON
Samson Sandhu was a patron of ours long before he was a volunteer. Samson was part of AIA (Athletes In Action) and came to be a regular patron of One Bistro for more than six months before going overseas to play basketball. Back in October, Samson found himself back in the US and waiting for God's guidance on his next chapter. Samson stopped by one afternoon and asked if he could come volunteer and for two months, he was a regular fixture Wednesday through Friday helping serve however we needed. Samson was a true blessing and we will miss his smile and joy here in the cafe'. Samson was able to return home after more than two years of the pandemic keeping him from his family. We are looking forward to God's blessings for Samson and waiting for Him to place the next "Samson" in One Bistro. 
 
Christmas Community Meal
 
One Bistro served up a delicious Christmas meal to 100 guests and blessed each person in attendance with a stocking filled with all sorts of goodies and packed with love!

Blessings Abound
December brought some wonderful and unexpected blessings to the bistro. The month began with a connection to a beautiful family from Myrtle Beach who came to visit Xenia to pick up their new family member, Alphonso, from 4Paws. They dined with us and some of them came to volunteer while the other family members were in training with 4Paws. When Ashli, the mom, was asked about her recent experience she said, “It was overwhelming in the best possible sense of the word. Life changing for our entire family. And, Xenia will forever be in our hearts; there is a real sense of community at 4Paws and at One Bistro; something just magical, indescribable. Life. Connection. Faith. Unforgettable.” Please come and see us the next time you are in town!
 
 
This group of friends who live in Wright Cycle Estates gathered for the holiday to celebrate their friendships and chose One Bistro as the benefactor of their giving generosity! Thank you!
