A note from Denise Davis, One Bistro Board President:
It has been 111 days since we have had any guests in the bistro; 111 days since people have been sitting and eating and laughing and talking and fellowshipping in the bistro. That is a very long time! It could have appeared as a huge obstacle for a small, non-profit, community cafe to overcome. And yet, I can't help but think about Ezra and Nehemiah from the Bible, as they returned to the land of Israel and faced the insurmountable task of rebuilding the city and wall of Jerusalem. In their own strength, this would have been impossible, but through the power of God they became tools, used to complete His plan!
Throughout all of these past 111 days, I have been impressed by 2 things:
- We could have despaired, and yet God showed up big time, through all of YOU! Our community rallied around One Bistro in an overwhelming way, and through so many different people: volunteers, donors, sponsors, patrons etc. We asked for help and you said "YES!" every. single. time.
- We have been kept humble! We experienced what it was like to fully rely on God to keep us going and serving our neighbors. Not in our own strength, but because we held One Bistro's mission as God's mission, His people became His tools to accomplish His plans!
And so, after 111 days, WE ARE OPEN! We are grateful and humbled and BLESSED beyond measure!
We are so thankful for your support and involvement in HIS mission: "To provide a place where our neighbors eat and come together as one community."

Greene County Career Center "Graduate of Distinction" and One Bistro "Intern of Distinction" |

One Bistro's intern, Chloe just graduated from the Greene County Career Center and was named one of ten "Graduates of Distinction." It is easy for all who work with her to see why! The distinction was based upon several categories, including community service, citizenship and extra-curricular activities. Chloe has excelled at serving the community through her internship with One Bistro!
As a child, Chloe was interested in cooking, however more interested in baking! She loves the creativity involved in designing and decorating sweets and desserts. She enjoys trying new things and improving each time she makes something amazing. Growing up overseas (England & Germany) gave her a diverse perspective on cuisine, unique ingredients and dishes. In high school she branched out from baking and eventually entered the Culinary Arts program at the Greene County Career Center.
The Career Center offers a "Workplace Program" for many of their students and Chloe was the first in the Culinary Arts program to take advantage of this opportunity. Instead of having a lab class, Chloe started working at One Bistro to gain some hands-on and real-life experience in the restaurant world. "One Bistro is excited about our "Workplace Program" partnership with GCCC," says OB Board Treasurer, Diane Dixon. "We look forward to hosting our next culinary student when Chloe heads to college. We are also especially excited about the GCCC's new location in Xenia." (Diane Dixon and her sister, OB Board President, Denise Davis, are both proud graduates of GCCC and benefited greatly in their career paths through the "Workplace Program".)
Working with Chef Greg has been both inspiring and stretching for Chloe. Learning to cook on the line was challenging at first, but she has grown in her skills, speed and confidence! The fact that One Bistro is a Community Cafe and that her work there serves the greater good, is just the icing on the cake (pun intended) for Chloe. "It is a one-of-a-kind place that is doing amazing things for the community." Chloe says, "It warms my heart."
In the fall, Chloe will be headed to Sullivan University to pursue a degree in Baking and Pastry Arts. Her goal is to become a pastry chef in a 5 star restaurant in Europe, and if you've ever tried her chocolate cream pie, you will know that her dream will be a reality very soon!
Congratulations, Chloe! We are so thankful for your time with the Bistro. Thank you for serving your community!!

Pay-It-Forward |
Pay-it-forward is a unique feature of One Bistro and an essential component of our "community cafe" model. It is NOT a tip! It is an opportunity to bless someone with, not only a warm, healthy, delicious meal, but inclusion into a loving, supporting community. The beauty of pay-it-forward is that it is NOT just a handout of food. Those who are in need of a meal are invited in and given an opportunity to connect and serve their community in a way that brings dignity and self-worth, while being fed, body and soul.
This is how it works:
All menu prices are a “suggested price” as we embrace a “pay what you can afford” concept with the following payment options.
- Pay what you can afford. If unable to pay, give your time in service as payment.
- Pay the full amount of the suggested price.
- Pay the full amount of the suggested price, plus a little extra to “pay it forward.” When you “pay it forward” by $6, you cover the cost of one meal for someone else to enjoy.
Pay-it-forward epitomizes our mission "To provide a place where our neighbors eat and come together as one community."
One of our long-term volunteers and supporters put it this way: "Volunteering at One Bistro opened my eyes to food insecurity. I have never in my life had to wonder where my next meal was coming from, but I have seen vulnerability and hunger on the faces of people coming into the bistro for food and it inspires me to pay it forward, to help them. I do it because I can and because it is the right thing to do!"
